Superbowl Big Green Egg Recipes
Use your Big Green Egg to create a game-day meal to remember.

It’s time for the big game – the biggest game of the year. In addition to wagering bets with friends and co-workers and creating your invitee list for the evening, you also have to plan a menu.

The Superbowl calls for only certain types of food – hearty, filling, perhaps even a little greasy. It’s not a time for elegant appetizers and delicate soufflés.

We think it’s the perfect time to call on the Big Green Egg. The versatile, outdoor cooker is an ideal platform for preparing your game-day food. We’ve selected a few Big Green Egg Super Bowl recipes to make your party a winning one – no matter who wins the game.
Super Bowl fans are sure to enjoy a warm pot of chili while watching the game.

Race Day Smokin Chili

Makes 10 servings

Ingredients:

• 6 slices of bacon

• 2 tablespoons vegetable oil

• 1 large onion, chopped

• 1 green pepper, seeded and chopped

• 4 cloves garlic, crushed

• 1 28-ounce can diced tomatoes

• 2 chipotle peppers in adobo sauce, chopped

• 2 cups low-salt beef broth

• 2 cups water

• 1 12-ounce can beef consommé

• 1/3 cup chili powder

• 2 tablespoons ground cumin

• 1 tablespoon brown sugar

• 1 teaspoon black pepper

• 4 cups seasoned beef, grilled or smoked, diced to medium size

• 1 15-ounce can dark kidney beans, drained

• 1 15-ounce can pinto beans, drained

Directions:

1. Preaheat your Dutch oven inside your Big Green Egg to 350°F over direct heat.

2. Cook bacon until crispy. Remove bacon, and set aside.

3.Add oil if necessary. Cook onion and green pepper until soft.

4.Add garlic, and cook for a few minutes.

5.Toss in tomatoes, chipotles, broth, water, consommé, chili powder, cumin, brown sugar and pepper. Mix and bring mixture to a simmer.

6.Add beef. Return to simmer.

Simmer for one hour, adjusting Big Green Egg temperature as needed.

Add beans. If necessary, add more water.

9.Chop bacon and toss in pot. Cook for 30 minutes. Add salt if needed.

Deep Dish Pizza

Makes 12 servings

Crust Ingredients:

• 4 cups King Arthur Unbleached All-Purpose Flour

• 3 tablespoons yellow cornmeal

• 1 ¾ teaspoons salt

• 2 ¾ teaspoons instant yeast

• 2 tablespoons olive oil

• 4 tablespoons butter, melted

• 2 tablespoons vegetable or salad oil

• 1 cup, 2 tablespoons lukewarm water

Filling Ingredients:

• ¾ pounds mozzarella cheese slices

• 1 pound Italian sweet or hot sausage, cooked and sliced (or 3 cups sautéed vegetables of your choice)

• 28-ounce can plum tomatoes, crushed; or 28-ounce can diced tomatoes

• 2 to 4 garlic cloves, peeled and minced

• 1 tablespoon sugar

• 1 to 2 teaspoons pizza seasoning or mixed dried Italian herbs, to taste

• 1 cup freshly grated Parmesan or Asiago cheese

• 2 tablespoons olive oil

Directions:

1. Set your Big Green Egg for indirect cooking, and heat to 425°F.

2. Mix the crust ingredients, and knead until smooth. This takes about 7 minutes at medium-low speed in a stand mixer.

3. Place dough in a lightly-oiled bowl; cover, and let rise until puffy, about 1 hour.

4. While dough is rising, prepare your 14 inch deep dish baking stone. Grease with non-stick cooking spray. Pour in 3 to 4 tablespoons olive oil. Tilt pan until oil covers the bottom and part of the sides.

Stretch dough into the largest-size circle possible. Lay dough in pan, and stretch it towards the edges until it starts shrinking back.

6. Cover, and let sit for 15 minutes.

Stretch dough to cover the bottom of the pan. Push dough up the sides of the pan. Let rest another 15 minutes.

8. Bake crust for 10 minutes, until barely brown.

While dough is baking, drain tomatoes. Combine with pizza seasoning, garlic and sugar. Add salt to taste.

10. Cover bottom of crust with sliced mozzarella, fanning slices into crust. Add sausage (or vegetables) and then the tomato mixture.

11. Sprinkle with Parmesan or Asiago. Drizzle with olive oil.

Bake pizza for about 25 minutes, until filling is bubbly and top is golden-brown.

13. Remove from the Big Green Egg, and let cool for 15 minutes before cutting and serving.
