No doubt about it: I love to try new recipes just as much as each and every one of you. But the truth is, sometimes we just don’t have time to be whipping up something new, ya know?

Believe it or not, one of my all-time favorite meals requires very little effort, and it serves as a great way to use up leftovers. Win-win, right?

OK, so what is it? Rice bowls! There’s absolutely nothing magical about this “recipe,” but I am completely hooked. Here’s what I do: Make rice. Find some yummy leftovers, put ‘em in a sauté pan and mix ‘em together with a bit of EVOO. Serve the leftovers over rice. Mix it up and enjoy.

How’s that for the world’s simplest go-to meal ever?

Very often my rice bowls end up being my lunch, but I’ve also been known to whip one up for dinner when I’m flying solo. They don’t always appear to make sense, but I promise they’re always delicious. A few examples:

Leftovers from taco night (fish, beans, corn, fish, red peppers, onions), sautéed with fresh spinach and served over brown rice …

Leftover roasted potatoes and kale, sautéed with lentils and served over brown rice …

bowled over.

Leftover curried chickpea salad and leftover roasted potatoes, sautéed with fresh spinach and served over brown rice …

bowled over.

OK, so I know we’ve already covered the fact that this is a win-win, but what about a win-win-win? Another pro about these rice bowls (besides the fact that they’re quick and delicious) is that they are a cinch to store in a container and take on-the-go. No more searching for healthy, gluten-free takeout options at lunch time!
