Orange Cake

This cake recipe is one of my favorite cake recipes. If you're looking to do some weekdays baking, try this quick orange cake. Orange Cake is a delicious, easy and refreshing cake. I used orange zest to give flavour to this cake.

Yield: Serves 8


•  2 eggs

•  1 1/2 cups whole wheat all-purpose flour

•  1 cup sugar

•  orange zest from two large oranges (about 1/3 cup)

•  2/3 cup walnuts, chopped

•  1 stick (1/2 cup) unsalted butter, room temperature

•  1 teaspoon baking powder

•  1 cup milk

•  1/4 teaspoon ground nutmeg

•  pinch salt


In a bowl, combine the flour, baking powder, salt and nutmeg. Set the flour mixture aside.
Using an electric mixer, beat the butter and sugar for a minute. Add the eggs and beat until smooth, about 1 minute.

Orange Cake

Preheat oven to 350°F.
Add the flour mixture and milk; beat until smooth, about 1-2 minutes. Fold in orange zest and walnuts.
Spray an 8x8-inch baking dish with cooking spray. Spoon the batter into the baking dish.

Bake on the middle rack of the oven until toothpick or skewer inserted into center of cake comes out clean, about 50-55 minutes.

Remove from oven and let cool before slicing.
